Palm wine tapping is an early-morning ritual in the Bamileke highlands. A local tapper guides you up to the grove at 0700, when the night's fermentation is at its freshest. Three varieties are tasted: raffia palm (slightly sour), oil palm (sweeter), and bamboo wine from the highlands.
